I've been really into quinoa salads recently. They are protein-packed, offer the base for a million different flavor combinations and trick me into believing it's summer whenever. This one by Closet Cooking was tried and gulped down recently.  Add new comment...

Somehow sandwiches for dinner make me feel guilty. Like they aren't proper nutrition or something.   But they just taste so good.   Maybe this wrap is a little bit of both. Greens and goodness wrapped together, heavier on the protein than on the carbs but still so satisfying.       Honey-Dijon Chicken Quinoa Wraps Taken from The Kitchen Prep   Makes 2 wraps1/2 cup cooked, shredded chicken {or rotisserie chicken, shredded}1/2 cup cooked quinoa1/2 a green apple, slice...

These were SO, SO good.  Served on my favorite naan recipe we couldn't have been more satisfied with dinner.  Earthy and spicy and then fresh cucumbers.  I highly, highly recommend you make some kind of flatbread or buy some pita and whip these up tonight!   At our house, two toddlers and two adults scarfed them down with little more said than, "Yummy" from the kids and "These are so good" from the adults.         Spiced Chicken Shawarma Wraps Taken from R...

A week ago I thought, "Soon the rain will come, right?"  Well the rain came.  In bucket-fulls.  In 24-hour long rains.  In puddles in my laundry area.  It came.     It's a good thing we think soup is delicious on a rainy night.         Now let me tell you a short story.  One time my parents flew to Suriname for 10 days.  Meanwhile, I got malaria back at home.  Imagine my older sister scared, caring for me, having to pick me up...

You know some nights when you are just hungry or frazzled or busy and you just don't want to take the time to find your good camera and good lighting and tell your husband to wait while you photograph what he just wants to consume?  Except you just know this would be a really, really good one before you even try it?  Well, that's a night when I haul out my point and shoot and then let the pictures be what they are.  So they are a little dark and murky because that happens when din...

Now that Thanksgiving is over, you're being bombarded with new ways to use up all of that leftover turkey.  Well, here's one more.  Generally the majority of my turkey finds its way into either fajitas or some kind of a taco soup ... well, what I can rescue before Nate turns as much of it into gravy sandwiches as he can.     Well this year I found myself with a plethora of leftover green apples, along with the turkey, due to my poor recipe reading skills.  This recipe I ...

Isn't it tragic when you're rushed, hungry, and eating an hour later than you meant to so you end up taking a terrible picture of some wonderful food?  It is to me because I look at this picture and think, "This isn't going to make anyone rush home to whip this up."   But you should.  You really, really should.     If you like black beans at all.  If you like smoky cumin-spiced dinners.     If you like the tangy flavors of cilantro and lime melded into fre...

I'm in love with black beans.  Love, love them.  And here it is much, much cheaper to buy them dried and cook them myself.  So when I buy black beans I make the whole bag and then we have black beans for a long, long time.  This is not a problem for me or for Canaan, who likes to eat them like raisins.     I also love, love mexican food.  Especially when I'm pregnant.  Mexican food that involves black beans?  You just can't go wrong.     I a...

Where do people find turkey breasts or cutlets just hanging out?  I could never find them in the US, sans the rest of the turkey, and I certainly can't find them here in Ecuador.  So my version used chicken cutlets.  But if you are lucky to live near an abundance of turkey breasts then even better for you!       I love recipes that can easily be turned into an entire meal.  With the addition of some rice under those beans to soak up the sauce this worked just p...

While we are on the subject of dishes that I have been withholding since I spent time at my mom's house, I might as well confess to this one as well.  Perfectly cooked chicken enfolded in creamy avocado and tangy, crunchy, bright pomegranates.  Wonderful.   I've withheld it so long that I can only cross my fingers and hope that pomegranates are still at Stanley's Fruit Market in time for you to make this.    Chicken Paillards with Avocado and Pomegranate Salsa Originally...
