Do you have a day? Just an extra day to do what you want. No deadlines, no big commitments? (I know, how often do those happen?)   Well just in case you do, I suggest this might be a cake for that day. A day when you can slowly and methodically make the batter and line the baking sheets. When you can make your salted caramel from scratch. When you can portion out frosting into three separate colors and frost to your hearts delight.      Don't we all wish we had a day to let t...

You know when you are at a birthday party and you see a beautiful cake and you can't wait to eat it? ... And then you find out it's carrot cake. Well truth be told I find that really disappointing. If I want birthday cake I want it to be rich and chocolately or totally vanilla. But not filled with carrots. Of course, I'll eat it but it's just not my favorite.       Turning this into a coffee cake, though, is just brilliant because first thing in the morning I'm not demanding the l...

THIS cake was what birthday dreams are made of ... and then what New Year's dreams are made of too when you just keep eating it for every meal the following day. (I know, I know it's about 9 months past my birthday and I've been keeping one of the best cakes I've ever had secret.)     The chocolate cake is now my go-to base. It's dense and over-the-top moist and pure chocolate. But it's that toasted marshmallow filling that just kills me. In all the best ways. As long as you are patien...

Another totally delicious, totally satisfying party cake. The kids and I made this mini-cake just for fun and boy were we glad we did! Look at that imperfect dipped center! Look how much nutella buttercream we were able to cram in there! Pretty sweet.   I loved everything about this cake and if I could snap my fingers and make it appear in my lunchbox today I'd do it! Moist chocolate, rich nutella flavor. Perfect indulgence.       Chocolate Cake with Nutella But...

If you are looking for a party cake but don't have the energy to come up with an elaborate design, this is a fairly uncomplicated one. It has great visual appeal and didn't take all day to make. This showed up at my friend Christine's birthday and once the first piece was cut it was gone in about 4 minutes flat. Of course that might have had something to do with the 30 people in the room!    It's a basic (good) chocolate cake. The peanut butter is subtle as it doesn't use as much ...

You guys know I'm always up for a good cupcake. One with mountains of frosting on top. One that is light and crumby, but not so light that it falls under the weight of that frosting mountain.   This cake holds its own and the butterscotch flavor laced throughout the crumbs is what makes it unique. While it won't replace some of my favorite cupcake flavors ever (vanilla with cookie dough filling, Chocolate Peanut Butter Sour Cream Cupcakes, Toffee Crunch Cupcakes and more!) it was fun ...

I think I told you I've been going through a layer cake phase. Once you start, it's hard to stop! (Until your back starts spasming daily and then you abandon all long cooking projects for a comfortable seated activity). And once again I am loving committing to smaller cakes using my 6" cake pans. ... Although one can dardly call a three-tier, sits higher than my cake stand cover cake "small."       This cake is the "motherload" in the words of my dad. His version of motherload usu...

Grocery store caramel topping is the pits. It's so incredibly bland compared to the real thing. Using some of that in any of the increasingly popular recipes that highlight salted caramel won't do the recipe justice.   My advice? Just keep a jar of this liquid amber goodness in your fridge. I personally find it tedious to think about making salted caramel and THEN starting on the actual recipe. But if there is a jar of it just sitting on the top shelf of my fridge ready to go then what coul...

Lately I am deep into cakes! Usually they feel like too much commitment and effort when bars take half the work and lay in neat lines in your freezer. But I'm loving cake and embracing after bedtime cake baking.   This cake is a perfect way to ease into Fall and into layer cakes. I found this cake to come together much more quickly than many other cakes you'll be hearing about soon. The layers have simple ingredients and you don't feel like you are completing 9 steps for each layer.   ...

Truly, I should have taken pictures.  I had this gorgeous, caramel draping like a rich gown cake cooling on the rack.   And then I tried to move it.  And then I had nothing but clumps of caramel and pound cake and crumbs all over.           This is a true pound cake.  But on top of being a really dense (and delicious) cake it's got this frosting that weighs about a ton.  Please don't repeat my mistake.  The frosting weighed so ...
